Soup!!- being something that they had chosen to cook.
The session started with frantic chopping of vegetables before cooking and blending.
It was a great effort by all and although some did not like the taste, as always, anything you cook and eat for the first time is a learning experience. For the simple recipe, see below.
Leek and Potato Soup
Ingredients: Method:
1 tbs oil Heat the oil in a large pan and add the onions, potatoes
1 onion, sliced and leeks. Cook
for 3-4 minutes until starting to soften.
2 leeks, sliced Add
the vegetable stock and bring to the boil.
4 potatoes, small and
cubed, skin on. Season
well and simmer until the vegetables are tender.
1 litre vegetable stock Whiz with a hand blender or in a blender until smooth.
Salt and pepper Serve
with a squiggle of cream.
Cream to serve (If
you prefer lumpy soup, don’t blend it)
